WHAT IS A VIENNESE COFFEE?
A Viennese Coffee is a single or double shot of espresso topped with whipped cream. It is also called “Einspänner” in German. This drink is often compared to a cappuccino. However, the Viennese coffee does notcontain hot milk and uses whipped cream instead of milk foam.
The origins of Viennese coffee
In the heart of Austria’s coffee culture lies the Einspänner, a classic Viennese coffee with a rich history dating back decades. Einspänner, meaning a “single-horse carriage” in German, gave the name to this coffee, paying homage to the era when such carriages served as taxis.
The Viennese coffee was supposedly born out of the ingenious idea of carriage drivers, who, while steering with one hand, cradled a cup of coffee in the other. The key to this tradition lies in the whipped cream crown atop the hot coffee, acting as a clever insulator, ensuring warmth and preventing spills.
Originally a comfort for coachmen, the Einspänner has transcended its origins and is now elegantly presented in stylish glass mugs, delighting coffee enthusiasts in Vienna’s charming coffeehouses.
HOW DO YOU MAKE A VIENNESE COFFEE WITH A BEAN-TO-CUP MACHINE?
Ingredients
- Your favourite coffee beans
- Whipped cream
Material
- 1 bean-to-cup coffee machine
- 1 glass, preferably a double-walled glass
Preparation
- Step 1 Add your coffee beans to your espresso grinder
- Step 2 Brew your espresso
- Step 3 Transfer your espresso into your glass and add the whipped cream on top. Enjoy straight away!
HOW DO YOU MAKE A VIENNESE COFFEE WITH A MANUAL ESPRESSO MACHINE?
Ingredients
- Your favourite coffee beans
- Whipped cream
Material
- 1 manual espresso maker
- 1 coffee grinder
- 1 tamper mat
- 1 grind distributor
- 1 tamper
- 1 scale
- 1 glass, preferably a double-walled glass
Preparation
- Step 1 Grind 14g of coffee in your portafilter. Using your hands, distribute the ground coffee more or less evenly in the portafilter.
- Step 2 Then use the grind distributor to ensure even tamping (2 to 3 turns).
- Step 3 Apply 15-20kg of pressure to your grind using your tamper, to compact your grind.
- Step 4 Before switching on your percolator, run a flush (the action of cleaning the filter of any grounds that may have remained and emptying the water group).
- Step 5 Insert the portafilter into the unit and start brewing. You can stop brewing when your drink weighs 28 to 42g.
- Step 6 Transfer your espresso shot in your glass and add the whipped cream on top. Enjoy straight away!
