How to make a Turkish coffee pot ?

The rich, aromatic brew steeped in a traditional cezve or coffee pot is a beloved tradition the world over. While many enjoy Turkish coffee when dining out, nothing compares to the ritual of carefully preparing it at home. In few simple steps, you will learn everything about Turkish coffee and know how to make a cezve at home.
What is a Turkish coffee maker?
The Turkish coffee maker, also known as a Cezve (or ibrik), is used to prepare Turkish coffee (also known as Oriental coffee). It is one of the oldest methods of making coffee. The Turkish coffee pot was traditionally made of copper, which is the best conductor of heat. Today, Turkish coffee makers are available in brass or stainless steel.
Unlike most other methods, which are based on the principle of infusion, the Turkish coffee maker uses the decoction method. Very finely ground coffee (like flour) is dissolved in boiling water with sugar (and spices, depending on the recipe).
How to use a Turkish coffee maker?
Use mineral water or filtered water. You can also heat it beforehand to reduce the extraction time.
The extraction time is approximately 2min30.
You can use a hotplate or microburner, but the sand coffee maker remains the most traditional and ideal for heating.
The ideal ratio is between 1/8-1/9. That’s 7.5g for 60ml of water.
What type of coffee should I use in a Turkish coffee maker?
We recommend that you choose medium-high roast coffees. You can test speciality coffees with this type of method. In recent years, during the ibrik championships organised by the SCA, the candidates have used speciality coffees.

- Powdered sugar

- A Turkish coffee pot
Preparation
- Step 1 Pour 2 cups of cold water into the coffee maker
- Step 2 Add 2 heaped teaspoons of ground coffee (very finely)
- Step 3 Add 2 teaspoons of caster sugar
- Step 4 Put the Cezve on medium heat
- Step 5 Stir gently. A froth will form
- Step 6 As soon as the coffee boils, remove the cezve from the heat, pour the foam into the cups and put the pot back on the heat until you have cream again.
- Step 7 Repeat the operation until the cups are full (this will avoid having too much ground coffee in the cup).
- Step 8 Leave the coffee to rest for about 1 minute and enjoy this Turkish delight.

The traditional Turkish coffee recipe was originally made with spices, cardamom and sugar at the beginning of the preparation. But if you’re using a specialty coffee, we advise you not to add anything as the coffee has its own aromatic potential. At the ibrik championships, the candidates add nothing because they are able to fully master the extraction process to achieve an aromatic cup.
